Probably the first scientific studies on digestion were done by Ivan Pavlov who became famous for his 'salivating dogs'. Pavlov showed that the digestive enzymes released and the amount of acid secreted depends on the type of food.
His experiments with rats showed that starches are digested in about two hours, proteins are digested in about four hours but a protein-starch mixture could still be digesting 13 hours later. With dogs, again the protein-starch mixture took over twice as long compared to the same food consumed separately.
Pavlov also showed that food taken on top (i.e. before digestion has completed) can lead to fermentation. This happens when you eat fruit after a meal; many people say that it gives them gas.
What could account for Pavlov's results?
The enzymes essential for digestion only function at specific pH levels; proteins and carbohydrate enzymes require opposite pH levels. If you mix them together in the same bag, you won't be able to digest either food properly.
"Most fruits go straight through the stomach into the duodenum for digestion, which means if you put fresh fruit on top of a big meal, it has to sit and wait in the top of the stomach until the other food is digested, during which delay bacteria attack the fruit and ferment it, gobbling up all the nutrients and leaving you with gas and metabolic wastes." In 1908 Dr Howard Hay after practicing medicine for 16 years developed High Blood Pressure, Brights Disease and a dilated heart. As there was no treatment available, Dr Hay decided to find a cure for his own symptoms. He looked at his food intake and the chemical process of digestion, the enzymes that are essential for this process and whether the food has an overall acidifying or alkalizing effect on the body.
To the amazement of his colleagues, he had a complete remission of his symptoms in 3 months of changing his diet. He also reduced his weight by 20kg's. In 1911 he introduced his Food Combining guidelines and gave lectures till his death about the need to combine foods properly and reducing acidifying foods from the diet.
If you think there's nothing to acid-alkaline food combining, try this: one day for lunch eat a steak with chips, and monitor how you feel after an hour or so. Next day eat the same steak, but with a large vegetable salad. Which day did you feel more tired, drowsy?
Try feeding your dog meat and biscuits for a while, see how he feels!
Try an acidifying McDonald's diet for a month.

Are there any clinical studies to settle this issue?
A study called "Cola beverage consumption induces bone mineralization reduction in ovariectomized rats" (the rats were fed cola - acid, pH 2.5 - and the effects on bone density measured) suggests that "heavy intake of cola soft drinks has the potential of reducing femoral mineral density".
Dr L. Frassetto's team at the University of California discovered that as we age, starting around age 45, we lose the alkaline buffer bicarbonates in our blood:
"Our group has shown that contemporary net acid-producing diets do indeed characteristically produce a low-grade systemic metabolic acidosis in otherwise healthy adult subjects, and that the degree of acidosis increases with age, in relation to the normally occurring age-related decline in renal functional capacity."

The Theory of the Alkaline Diet

To keep your body fresh and free of diseases, you have to eat the proper food called alkaline diet or acid alkaline diet. Basically it is a theory that when we eat or consume a food, after several processes like digestion, metabolism and others, it leaves an alkaline residue or acid residue, which determines the acid-alkaline nature of our body.

Alkaline diet theory is based on the fact that the pH of our body is slightly alkaline, that is from 7.35 to 7.45 (in some texts it is 7.36 to 7.44). Our diet should represent this balance. A disturbance in this balance will cause some severe problems in the body. The nature of liquid whether acidic or alkaline is determined by the pH scale. It ranges from 0 (very strong acid) to 14 (very strong alkaline). 7 is the neutral point on pH as that of water. A pH below 7 shows acid things, as we go down, becoming strong acidic, and pH above seven represents alkaline products, intensity increasing as we go up to 14.

Medical study of almost every kind has alkaline diet roots although this theory not acknowledge by conventional medical societies. Diets which contain 60% alkalinity should be used to maintain the balance of the body. One have to use highly alkaline diets (80%) is the balance of his/her body is disturbed by the extensive use of meat, eggs, cream and other acidic foods.

Vegetables, low fat fruits, nuts, tubers fresh citrus and other things should be preferred when talking about alkaline diets. But what is an acid alkaline diet exactly? This kind of diet has been defined in so many ways that it's hard to separate what's fact and what's made up. To put it simply, it's an eating program that involves foods that leave an alkaline residue when they're digested. It extensively promotes keeping a diet that is mostly dominated by fruits, veggies, legume, nuts, roots, and tubers.

To help us understand what makes an effective acid alkaline diet, let's take a look at the two substances that make up this diet: acid and alkaline. What is an acid? Most of us can probably recall from high school chemistry classes that acids, by scientific definition, are substances that have several distinctive qualities: they can turn litmus paper to red, has a sour taste, and releases hydrogen ions chemically. The strength or weakness of acidic substances are determined by the concentration of hydrogen ions. On the other hand, alkaline is the complete opposite: it turns litmus paper blue, has a bitter taste, and chemically accepts hydrogen ions. When the alkaline substance is stronger, its pH level is higher.

There are four nutrition-related acid/alkaline balance factors: the balance of acidity/alkalinity of food before they are eaten, the balance of acid and alkaline in bodily fluids and the blood, the effects of such food after they are metabolised, and the acid and alkaline chemistry of digestion. The idea is to eat meals that include both acid and alkaline foods, as both have properties that are beneficial to the body.

The problem is, most people's eating habits are highly acid-forming. For example, sodas and coffee--which is two of the most commonly consumed drinks in the world. These two drinks are highly acidic that it can take more than 20 alkaline supplement capsules or cups of alkaline water to counteract its acidic effects. Also, the typical diet of most people is mostly dominated by meat-and-poultry meals. Add that to the fact that consuming alkaline-forming foods is not exactly a popular choice. Acidosis happens, and catabolic damages are increased and sped up, and anabolic repairs in the body are hindered.

The best way to avoid such metabolic disasters is to keep to a sensible acid alkaline diet and eat less meat and more fruits and vegetables. Through this, the body bolsters the immune system more efficiently, plus, metabolism is improved as well. This not only gives you more energy, it helps you lose weight--and keep it off--in a healthy way. Breaking Down the Acid-Alkaline Diet

You have probably heard about the Acid / Alkaline Diet as it has gained more attention and popularity in recent years due to it's fat burning capabilities. But contrary to what you might think the Acid / Alkaline Diet is not really a diet at all, but rather common sense eating habits that will bring your body back into a balanced state of health, it's natural state.

The basic premise behind the whole acid / alkaline diet is that there are foods that are acid forming within the body and there are foods that are alkaline forming within the body. Considering that our blood has a pH level which is slightly alkaline, it is believed that we need to maintain this slightly alkaline state in order to maintain our health.

So, this particular diet (which is not really a diet at all) encourages people to eat at least 70% alkaline forming foods and 30% or less acid forming foods.

Alkaline forming foods are most raw fruits and vegetables, especially citrus fruits and green leafy vegetables. Acid forming foods are meats, dairy, sugars, coffee, bread and soda.

When you look at these foods it becomes obvious that the average diet for most people consists of 70% acid forming foods. Many health practitioners believe that this is the cause of the global obesity and type 2 diabetes epidemic we are currently experiencing.

In regards to weight loss, it is believed that when our body is over acidic our cells protect themselves by creating a layer of fat around them. However, when the body returns to normal healthy pH levels (i.e. slightly alkaline) this fat quickly dissolves as it is no longer needed.

What I find most interesting and appealing about this particular diet is that is really nothing new. It is not a fad but rather a return to old dietary values and habits. Did anyone ever tell you to 'eat your greens' when you were growing up? Perhaps you need to follow that advice today, but instead make alkaline forming foods the primary component of your diet and enjoy the many benefits.

What makes the alkaline diet essential is that it provides the body a different source of minerals like calcium from the bones instead of it having to dip into these said reserves.

As people age the pH balance fluctuates easily and can cause a decline in renal functions and the alkaline diet helps maintain the balance necessary in order to avoid this health decline in the future. proponents of an alkalizing diet maintain that high acid producing foods can easily disrupts the natural balance therefore incurring a loss in essential minerals such as magnesium, potassium, sodium and calcium when the body tries to restore its balance. some practitioners attribute this erratic activity towards the cause of illnesses.

Headaches, nasal congestion, sluggishness or lack of energy, anxiety, irritability, excess mucous production, nervousness, cysts, constant colds or flu are symptoms that alkalizing diet practioners would attribute as a person with an imbalanced alkaline level. The diet is not widely practiced yet as most physicians do not believe that the reduction of acid containing food such as meats, salts, refined grains and dairies and the increase of an alkaline diet is entirely beneficial to a person's health.

But if we want to be exact, instead of thinking of it as the "acid vs alkaline diet," it would be better to think of it as the "acid alkaline balance diet." Like yin and yang in Traditional Chinese Medicine, acidity and alkalinity are not inherently positive or negative. It is our responsibility to attain a state of balance between these interconnected elements.

The acid alkaline balance diet is often termed the acid alkaline diet, and sometimes it is simply described as the alkaline diet. Nevertheless, although there are a number of different names for this popular approach to eating, the acid alkaline balance diet may be the most suitable one. That is because the core fact at the heart of this diet is that you should eat in a way that helps you to achieve a balanced internal pH.

It is true that some fad diets that you may have seen tell you to eat exclusively alkalizing foods. In actuality, however, eating only alkaline-producing foods is both unhealthy and impractical.

To begin with, a 100 percent alkalizing diet would be pretty boring. Not only would poultry, fish, and dairy products be entirely off limits, but so would beans, tomatoes, and even whole-grain breads.

A second issue with such a diet is that you would miss out on important nutrients which are found in some acidifying foods. For example, tomatoes are high in cancer-fighting lycopene. And at least one study shows that prunes may guard against osteoporosis.

As its name suggests, the goal of the acid alkaline balance diet is not to go to an extreme of alkalinity. Since this is the case, you don't need to eat only alkalizing foods in order to create an ideal acid-alkaline balance.

But you probably do need to eat many more alkalizing foods, and fewer acidifying ones. Whether you eat this food or that food is not as important as the overall ratio of acidifying to alkaline-forming components in your diet.

This is to say that if you completely remove sugar and acidifying beverages like soft drinks, you have a little more margin for error, which means that you can eat a little more meat and dairy products without your body becoming too acidic. To give you another example, if you choose to eat poultry, you should compensate by eating less dairy, and so on.

There is no one right answer for how to use your "budget" of acidifying foods, but in general it is always a good idea to emphasize foods that are low in calories and rich in vitamins, minerals, fiber, and other health-giving nutrients.

The bottom line, however, is that no matter what kind of diet you currently have, you can start making simple changes to create a healthier acid alkaline balance.

The alkaline diet is a way of eating that focuses on foods which shift your internal pH toward the alkaline end of the spectrum. This theory is not new, but its popularity has dramatically increased over the past decade, and interest continues to grow.

Many are confused because the words "alkaline" and "alkalizing" are two different things. This is to say that a food that tastes very acidic, such as lemon juice or apple cider vinegar, can actually have a strongly alkalizing effect once it has been digested and assimilated. By the same token, a food that tastes sweet rather than acidic, such as cane sugar, is often strongly acidifying once it has been absorbed.

The Alkaline Diet vs. Popular Low-Carb Diets

If you have thought about trying the alkaline diet, you may be wondering how it contrasts with other common diets, particularly low-carb diets including the Atkins diet and the South Beach diet.

Initially, the alkaline diet seems to be the polar opposite of the low-carb diet, but the truth is more complex. As you are constantly reminded, the low-carb diet restricts your intake of carbs, including bread, pasta, potatoes, sugar, beans--even fruits and vegetables. On the other hand, you are allowed to eat as much as you want when it comes to pork rinds, cheese, and other foods that are rich in protein and fat.

In contrast, the alkaline diet restricts consumption of meat and dairy products, nearly all foods that make the body more acidic. Another difference is that while low-carb diets limit fruits and vegetables, these foods are strongly encouraged on the alkaline diet. This is because fresh produce has the most nutrients and the fewest calories of any food, making it a must-have for anyone who wants to boost energy and lose weight.

Surprisingly, however, the alkaline and low-carb diets do have something in common. Both diets encourage people to eat less sugar and processed grains, but for different reasons. Fans of the low-carb diet point out that these abundant carbs are a major reason that people have become so much fatter over the past few decades. In the words of diet guru Barry Sears, the central aisles of any grocery store are basically one big chunk of carbs divided up into different bags and boxes. (There's a lot of fat in those packages, too.)

Interestingly, these processed carbs also tend to be acidifying. This is because the most common grains, namely corn, rice, and wheat, contain acidifying compounds.

When you get down to it, the main difference between these two diets is that the low-carb diet takes a sledgehammer to carbs, while the alkaline diet uses a scalpel. True, some carbs are very harmful, particularly when you eat too much of them. But something is wrong when anti-carb hysteria reaches such a pitch that people remove even apples, carrots, and celery from their diets. These nutritious foods are highly beneficial, and they're definitely not why so many people are fat. On the contrary, they are the key to losing weight, because they fill you up without adding many calories to your daily intake.

The first thing you need to understand is what an alkaline food item is. Rather than use this as cooking information, followers of the acid alkaline diet use this combustion as a comparison to how the body breaks down and uses food as a fuel source.

Foods that leave this kind of residue include low-glycemic index fruits and vegetables, citrus fruits, tubers, roots and nuts. Switching your diet to solely these food items, it is believed, will help keep the body's overall pH balance at a slightly alkaline level, which is thought to be a natural and healthy state. Foods to avoid on this plan include animal proteins, processed foods, unnatural sugars, and stimulants like caffeine.

A diet rich in alkaline foods is also thought to reduce the body's reliance on stored pH balancers such as the calcium in bones. Some studies have even shown that an alkaline-rich diet, or a regular use of supplements, can increase the amount of bone mass and muscle mass in older people, helping to offset conditions like osteoporosis in women and degenerative muscle wasting in the elderly. And while many say that more research is needed on the benefits of an alkaline diet, there have been studies done that show that the formation of kidney stones is largely prevented with an alkaline-rich diet.

Followers of the alkaline diet say that their food consumption is closer to what our ancestors would have originally eaten. They say that, before the onset of Western civilization, a typical human diet was unprocessed and uncooked plant matter. Grains were not edible until the discovery of tools like the mortar and pestle, and meats were an uncommon addition, depending on the hunting prowess of the tribe, rather than domestication of meat-bearing animals. Instead, people had to rely on the plants, fruits and vegetables that could be eaten without problematic preparations.

Proponents of an alkaline diet may do so to alleviate symptoms that they believe are due to larger amounts of acidic foods in the modern diet. Practitioners say that people suffering from frequent illnesses and headaches, or an overall lack of energy, and women who have ovarian and benign breast cysts might benefit from an alkaline diet, or at the very least, a reduction in the amounts of red meat and processed grains that a person consumes.
